Orange Pecan Cookies

Ingredients

1 cup butter or shortening
½ cup brown sugar
½ cup white sugar
1 egg, beaten
1 Tbs grated orange rind
3 Tbs orange juice
2 ¾ cups sifted flour
¼ tsp soda
¼ tsp salt
½ cup chopped pecans

Instructions

Cream butter and sugars until light and fluffy. Add egg and orange rind and juice. Mix well. Add sifted dry ingredients and chopped pecans and mix well. Shape dough into rolls about 2 inches in diameter. Wrap in waxed paper and chill for several hours. Cut into ¼ inch slices and bake on slightly greased cookie sheets at 375 degrees for about 10 – 12 minutes. Should be removed from sheets immediately.
