I was talking with my Mom recently and she mentioned that she has list of favorite Cookies by Bess cookies in the back of her cookie book. One of the cookies on the list is Orange Pecan Cookies. As we were talking she mentioned that she doesn’t really remember these making cookies, but figured they must be good since they are on her list! I don’t remember making them before either, so I decided to try them and prove her right!

I will admit, the most impressive thing for me about these cookies is the cookie dough. It’s downright AWESOME! I hate to say it’s better than the actual cookies, so I won’t ?, but trust me you are going to want to try this cookie dough!

I am rating Orange Pecan Cookies as 2-stars for cookie difficulty. This is a basic refrigerator recipe with no tricks or difficult steps involved. Just mix, roll, chill, slice, and bake!

Another good reason I decided to make these cookies was because I had all the ingredients in my pantry! I don’t always have orange juice and oranges in my refrigerator, so when I do I like to take advantage! I gathered all my ingredients together and got started.

As I mentioned above, the Orange Pecan Cookie dough is so awesome…just looking at it makes my mouth water a bit…I know, I’m shameful.

The dough is easy to blend together. I didn’t make any adjustments to the recipe and after I added the pecans, it was basically ready for rolling.

The dough wasn’t sticky and rolled out nicely. I did use a little flour on my hands and cutting board as I rolled it out. The recipe says to shape the rolls 2 inches in diameter. I think mine came out a little smaller.  Once rolled I wrapped them in wax paper for chilling.

I stared making the dough a bit late in the afternoon, so I ended up putting the rolls in the refrigerator overnight.

The rolls came out of the refrigerator nice and firm and perfect for slicing! I used my kitchen pairing knife, which is about the sharpest knife I have. There were no issue slicing through the orange rind or pecans. As I was slicing, I tried to be consistent on the ¼ inch slices, which seemed a little thick, but ended up being perfect!

I must show the dough close up once again.  It’s so pretty with the flecks of pecans and bits or orange rind.  Such a nice cookie dough!

I really appreciate the refrigerator type of cookies! Making the dough the day before, sticking it in the refrigerator overnight, and then baking the next day really speeds up the process! I was able to slice and bake these cookies in no time with little clean up when I was done! A WIN-WIN all around!

The finished cookies taste as good as the cookie dough! The flavors of the orange and pecans together is simply amazing! Orange Pecan Cookies are a great for filling your cookies jars ! They are easy to make, taste great, and can easily be stacked without worrying about messing up decorations or sticky frosting.

Having said that, I do think the cookies could use a little dressing up. I sprinkled a little powdered sugar on the cookies once they cooled. I also plan to use the (Orange Frosting) from the Orange Tea Cookies recipe to frost some of these cookies. The Orange Frosting will add more sweetness and tangy orange flavor as well as dress these awesome cookies up. You can still fill your cookie jars with them, just make sure the frosting firms up a bit first!

Now I know why Grandma Bess’ Orange Pecan Cookies are on my Mom’s list of best cookies…from the cookie dough to the finished cookie, these are one of the most flavorful cookies I’ve made yet!

Orange Pecan Cookies

Ingredients

1 cup butter or shortening
½ cup brown sugar
½ cup white sugar
1 egg, beaten
1 Tbs grated orange rind
3 Tbs orange juice
2 ¾ cups sifted flour
¼ tsp soda
¼ tsp salt
½ cup chopped pecans

Instructions

Cream butter and sugars until light and fluffy. Add egg and orange rind and juice. Mix well. Add sifted dry ingredients and chopped pecans and mix well. Shape dough into rolls about 2 inches in diameter. Wrap in waxed paper and chill for several hours. Cut into ¼ inch slices and bake on slightly greased cookie sheets at 375 degrees for about 10 – 12 minutes. Should be removed from sheets immediately.
