Macaroon Surprises
As I was paging through Cookies by Bess looking for the next cookies to make, my husband mentioned he was craving macaroons…the super coconuty type of macaroon. So, I looked up macaroons in the index and was surprised to find only one recipe…these Macaroon Surprises. I just assumed that there would be several macaroon type recipes. With just this one recipe, my decision was easy so I made these cookies.
I think it’s funny to note that while paging through Cookies by Bess on another day, I noticed a couple other macaroon type recipes listed under “coconut”…ha ha, now I have a couple more options to make!
As I read through the recipe, it was clear right off this wasn’t your typical coconut macaroon recipe. Candies cherries in a macaroon recipe is new to me…I guess cherries are the “surprise” part of this cookie recipe!
I am rating this recipe 2-stars because of the added step of beating the egg whites and chopping up cherries. Not a difficult tasks, but an added steps none the less.
After gathering all my ingredients and utensils together…I got started mixing.
The dough came together nicely. Creaming the butter, sugar, and extracts was easy and the dough was nice and fluffy and fragrant. Adding the nuts, cherries, and coconuts next brought a great texture to the dough.
At this point, the dough was a little dry as the only liquids are the extracts.
Next, beating the egg whites.
And then folding them into the dough. The chunky consistency and texture of the dough made it a little difficult to actually “fold” in the egg whites, but I did the best I could to slowing mix together. The egg whites added moisture to the dough and softened it up a good amount.
I spooned a generous teaspoon full of dough onto the greased cookie sheets. The cookies spread out a little as they baked so placing them 2 inches apart as the recipe says worked great.
I baked the cookies for the full 15 minutes. I tried both 13 and 15 minutes. The extra two minutes gave the coconut a bit of a toasted look. Other than that, there wasn’t much difference in the cookie or ability to remove them from the cookie sheets, so I stuck with 15 minutes.
I loved the look of the dough when mixing the ingredients together and I love the look of the baked cookies too! The toasted coconut, little red cherries, and varying shapes give these cookies a fun texture and personality.
After tasting these Macaroon Surprises, I wouldn’t consider them a traditional “coconut macaroon” cookie, but I would recommend them as a great everyday cookie your family will love!

Macaroon Surprises
Ingredients
1 ¾ cups sifted flour
1 tsp baking powder
¼ tsp salt
½ cup chopped candied cherries
½ cup chopped nuts
1 cup moist coconut
½ cup butter
¼ cup sugar
½ tsp almond extract
1 tsp vanilla
2 egg whites
3 Tbs milk
Instructions
Cream butter and sugar until light and fluffy. Add extracts and milk. Add sifted flour, baking powder, and salt. Mix well. Add cherries, nuts, and coconut and mix well. Flod in stiffly beaten egg whites. Drop by teaspoons full on greased cookies sheets about 2 inches apart. Bake at 375 degrees for about 13 – 15 minutes. Store in air-tight container.
