Chocolate Almond Surprises

Ingredients

¾ cup butter
¼ cup sugar
2 tsp vanilla
Almond filling
2 cups sifted flour
½ tsp salt
4 oz. milk chocolate candy
2 Tbs milk

Instructions

Melt chocolate and milk over hot water. Cool. Cream butter, sugar, and vanilla. Blend in melted chocolate mixture and beat until light and fluffy. Add sifted dry ingredients, gradually. Mix well. Shape into balls, using rounded teaspoonful for each cookie. Make a hole in center of each cookie and fill with a little almond filling…about ¼ teaspoon. Seal. Place on ungreased cookie sheets and bake at 350 degrees for 12 to 15 minutes. Roll in confectioner’s sugar after baking.

Notes

Almond Filling:

Combine ½ cup ground almonds, 1 unbeaten egg white, 1 Tbs water and ½ tsp almond extract. Mix well.
