Spring in Denver is a roller coaster ride when it comes to the weather. This particular day in late March was a pretty typical Spring weather day, it was sunny in the morning and then it snowed in the afternoon! Baking on snowy/rainy days is one of my favorite things to do, so I started looking through Cookies by Bess to find a fun springy recipe to make. I’m so glad I decided on Angel Cookies!

I didn’t realize it when I read the recipe, but it turned out to be a perfect Spring recipe! What a great surprise!

The springiness of the recipe didn’t hit me until I was in the midst of making the cookies. The recipe instructions say to “Dip each ball halfway into water then in sugar.” While I was making my test batch, using regular old white granulated sugar, I decided to use my colored sugars along with the white sugar. The result was a fun, colorful, springy cookie that shouted SPRING!

I rated this cookie recipe 2-stars because it has multiple steps and the steps are easy. All the steps along with the 10 dozen cookies this recipe makes means it will take a while to get everything all the cookies baked up, so make sure you plan for a few hours of baking time.

Angel Cookies would also be a great recipe to bake with kids! Rolling the dough into small balls and dipping them in sugar could be a fun activity for kids that want to help. This can also give the adult baker a nice break ? Using colored sugars will make it fun for the kids and watching the cookie flatten out in the oven while they bake will also grab their attention!

As usual, I gathered all my ingredients and utensils together and got started!

I have no problem admitting that I LOVE eating raw cookie dough!  You can tell me all day long you aren’t supposed to eat it, but geez…how can I resist?  I try the cookie dough with every recipe I make and love all of them, but some more than others. This cookie dough is AWESOME! Maybe it’s the brown and white sugars or the almond flavoring or both. Regardless, definitely try this cookie dough…it’s totally worth the risk!

The dough mixed up easily and I didn’t make any adjustments to the recipe. I will mention that I didn’t sift the dry ingredients. The recipe just says to “Add other ingredients and mix well.” No mention of sifting, so I didn’t.

Now came the fun part! Personally, I really like making “shaped” or “molded” cookies. Often shaped cookies are ones you roll into balls before baking. Not sure why, but it’s relaxing for me to roll the cookie dough into little balls 🙂 The recipe mentions that the balls will flatten out and spread, so I started with a small test batch of three cookies to see exactly what that meant.

The cookies stayed round in shape and flatten to about an inch in a half in diameter. I made sure to stick with a small ball size, so the cookies didn’t get too big.

Now it was time to get creative! I pulled out my spring colored sugars and got to work dipping each cookie ball in water and then in the colored sugars.

I baked the cookies for 10 minutes. Any longer in my oven and the cookies would have been too brown. So, depending on how well you like your cookies done, make sure you watch each batch closely towards the 10 minute mark so they don’t over bake and get too brown.

I removed the cookies from the cookie sheet right after taking them out of the oven. The recipe says to bake on ungreased cookie sheets, which I did. They were pretty easy to remove from the cookie sheet right out of the oven. But, some of the cookies did leave a mark on the cookie sheet and some left some cookie crumbs stuck to the sheet. The longer I left them on the cookie sheets, the harder it was to remove them with out breaking them or chipping the side of the cookie a bit.  Next time, I will try lightly greasing the cookies sheets to see if this helps.

I’m so happy with how these Angel Cookies turned out! They are a crunchy, sugary, and super almondy cookie that, if you use the colored sugars, will brighten up your day and your dessert tray! The cracked texture gives them personality and the sugary glaze is a wonderful compliment to the almond flavors!  These cookies are easy and fun to make and I know you and your family/friends will love them!

Angel Cookies

Ingredients

½ cup brown sugar
½ cup white sugar
1 cup shortening (butter)
1 egg
1 tsp soda
1 tsp cream of tartar
½ tsp salt
2 cups flour
1 tsp almond flavoring

Instructions

Cream shortening with sugar and egg. Beat well. Add other ingredients and mix well. Roll into small balls. Dip each ball half way in water then sugar, to form a glaze. Bake on ungreased cookie sheets in 350-degree oven for 10 – 12 minutes. These cookies will flatten out and spread.

    My Mother used to make a cookie like this but it had chopped pecans in it and no almond extract? Has anyone ever heard of an angel cookie like this one but with chopped pecans…?

    This is a family favorite from one of my job supervisors way back in the 70’s. She was kind enough to share the recipe with me. I never thought to use colored sugar though..but I will next time. It’s a time tested recipe and really delicious.
